For me, no party is complete without a big platter of 7-Layer Bean Dip made with refried beans, guacamole, sour cream, salsa, cheese, olives, and green onions! Just thinking about all the delicious, mouth-watering ingredients in one easy no-bake dish makes me drool. I can’t wait to dive in with my tortilla chips! It’s the ultimate party and game-day food.

Easy Seven Layer Dip

I love how this 7 Layer Dip uses pantry staples like refried beans, diced green chilis, and sliced olives that are seasoned and layered with salsa, ripe avocados, cheese, and other yummy Mexican ingredients to make this flavorful cold party dip. For me, it’s such a game-changer when I can easily pull this dip together without having to pick up too many items at the grocery store.

Tips for Beginners

  • Diced green chiles . Milder than jalapeños, these add a slight kick to the refried beans. If you’re not a fan of spice, you can reduce the amount or substitute it with diced green bell pepper.
  • Make it thicker. For a thicker sour cream layer, swap half of the sour cream for brick-style cream cheese.
  • Add beef for a taco dip. Add cooked ground beef between the bean and sour cream layers for 7-layer taco dip.
  • Add even more flavor. Add a tablespoon of ranch seasoning to the sour cream layer.

  • ▢ 16 oz. refried beans store-bought or homemade (1 can)
  • ▢ 4 oz. diced green chiles (1 small can)
  • ▢ 1 cup sour cream
  • ▢ 2 tbsp taco seasoning store-bought or homemade
  • ▢ 2 avocados
  • ▢ 2 tbsp chopped fresh cilantro
  • ▢ ½ jalapeño pepper diced (optional)
  • ▢ ½ lime juiced
  • ▢ ½ tsp kosher salt
  • ▢ 1 cup salsa use store-bought, homemade, diced tomatoes or pico de gallo
  • ▢ 1 cup shredded romaine lettuce
  • ▢ 1 cup shredded Mexican cheese
  • ▢ 4 oz. sliced black olives drained (1 small can), green or kalamata also work
  • ▢ 2 green onions sliced, or use chives
  • ▢ tortilla chips optional, for serving

  • In a large bowl, mash the avocados. Stir in the cilantro, jalapeño, lime juice, and salt. Spread over the sour cream. 2 avocados, 2 tbsp chopped fresh cilantro, ½ jalapeño pepper, ½ lime, ½ tsp kosher salt
  • Spread out the salsa, then romaine, cheese, olives, and green onions. Cover and chill until ready to serve. 1 cup salsa, 1 cup shredded romaine lettuce, 1 cup shredded Mexican cheese, 4 oz. sliced black olives, 2 green onions, tortilla chips

How to Make 7 Layer Taco Dip Step by Step

Prepare the refried beans : Mix 16 oz. refried beans and 4 oz. green chilis together in a large bowl. Spread the mixture out evenly in the bottom of a 9×9 inch baking dish.

Prepare the sour cream: In a medium bowl, mix 1 cup sour cream and 2 tbsp taco seasoning together. Spread it out over the bean layer.

Make the guacamole : In a large bowl, mash 2 avocados. Stir in 2 tbsp cilantro, ½ jalapeno, juice from half a lime, and ½ tsp salt. Spread over the sour cream mixture.

Layer the dip : Spread 1 cup salsa, 1 cup romaine, 1 cup cheese, 4 oz. olives, and 2 green onions. Cover and chill until ready to serve.

Serve and enjoy: Serve cold with tortilla chips and enjoy.

How to Store

If you’d like to make this dip ahead of time, the guacamole layer may begin to brown if assembled too far in advance. I recommend assembling the bean and sour cream layers ahead and waiting to add the remaining layers until just before serving for the most visually appealing dip. Cover tightly with plastic wrap to preserve freshness.

Store leftover 7 layer dip tightly covered with plastic wrap in the refrigerator for up to 4 days. The dip may get a bit watery as it sits, but you can drain off any excess liquid before serving. Note that the guacamole layer may also begin to brown as it sits, but it is still perfectly safe to eat!

I do not recommend freezing this dip, as guacamole does not freeze well and the sour cream will begin to separate if frozen.

What to Serve with 7 Layer Mexican Dip

All you need to enjoy this 7 Layer Dip is a bag of your favorite tortilla chips. Make sure they are the perfect thickness to be crunchy and still hold all that yummy bean dip without falling apart.

To round out our snack offering, I’ll often serve baked chicken wings along with baked mozzarella sticks . Or, I’ll throw together this effortless air fried zucchini for a healthier snacking option.

Essential Grocery List

It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.

However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.

In the list below, I’ve compiled everything I always have on my stock-up grocery list.
