Zucchini is one of my all-time favorite vegetables to incorporate into any meal. When I’m looking for a quick, effortless side dish or snack, these air fryer zucchini are my go-to! I decided to sprinkle them with Parmesan for an extra salty, savory boost—and honestly, it takes them to the next level. Ready in just 10 minutes, they’re perfectly crispy, golden brown, and versatile enough to complement any dish or be enjoyed on their own as a delicious snack.

I love how the air fryer makes veggies taste way more indulgent than they actually are—crispy edges, zero fuss, and way faster than roasting. And let’s be real, a little Parmesan goes a long way in making vegetables irresistible. It’s the same magic that makes my Lemon Parmesan Roasted Broccoli such a hit. That salty, cheesy finish just makes everything better.

- ▢ 4 medium zucchini sliced into 1/4-inch coins
- ▢ 2 tablespoons olive oil
- ▢ 3/4 teaspoon salt
- ▢ 1/2 teaspoon garlic powder
- ▢ 1/2 teaspoon onion powder
- ▢ 1/4 teaspoon pepper
- ▢ 3 tablespoons grated parmesan
- ▢ chopped fresh parsley
Instructions
- Preheat the air fryer to 400 degrees. Drizzle the olive oil and sprinkle the salt, garlic powder, onion powder, and pepper over the zucchini. Toss to coat. 4 medium zucchini, 2 tablespoons olive oil, 3/4 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon pepper
- Spray the bottom of the air fryer basket with nonstick spray. Place the zucchini in an even layer in the air fryer basket. Sprinkle the grated Parmesan over the top. Do this step in batches if needed. The zucchini should be added in a single layer. 3 tablespoons grated parmesan
- Air fry the zucchini for 8 to 10 minutes until tender and edges are crispy.

How to Cook Air Fryer Zucchini Step by Step

Gather the ingredients: Gather all the ingredients together and preheat the air fryer to 400°F.

Season the zucchini: Slice 4 medium zucchinis into ¼-inch coins and add them to a large bowl. Drizzle 2 tbsp olive oil over the zucchini and add ¾ tsp salt, ½ tsp garlic powder, ½ tsp onion powder, and ¼ tsp black pepper. Toss to fully coat the zucchini.

Prep the air fryer: Lightly coat the air fryer basket with nonstick spray, then arrange the seasoned zucchini in a single layer. Sprinkle 1–2 tablespoons of grated Parmesan over the top for that irresistible cheesy crust.

Cook the zucchini: Cook the zucchini in the air fryer for 8-10 minutes, until they’re tender and the edges are nice and crispy.

Finish and serve: Sprinkle 1 more tbsp of Parmesan cheese over the zucchini before serving. Enjoy!

How to Store and Reheat
If I have any leftovers, I store them in an airtight container in the fridge for up to 3 days. To reheat, I just pop them back in the air fryer for a few minutes at 375°F until they’re warmed through and crispy again. It brings them right back to life—way better than the microwave, which tends to make them soggy.
Serving Suggestions
You can add this crispy zucchini to just about any meal—it’s that versatile. I love snacking on them straight from the air fryer, but they also make the perfect easy side dish. If I’m throwing together something fun like chicken fried steak sandwiches , I’ll add these on the side for a lighter, veggie-packed balance. They’re also a great companion to something a little fancier, like beef tenderloin , during the holidays or for a special occasion. No matter how you serve them, they always add that golden, crispy touch that makes the whole plate feel a little more exciting.
