Bacon Wrapped Green Beans
If you are stuck for inspiration for sides to serve this Christmas and Thanksgiving , you have to give these bacon wrapped green bean bundles a go!
Perfectly sweet and salty, they work well with so many mains and are super simple to make. They make a wonderful addition to any occasion dinner, but they are quick enough to make that you can serve them as part of a weeknight meal.

How to make bacon wrapped green bean bundles

- Boil the beans in salted water to partially cook them.
- Place them in a bowl of iced water and allow to dry.
- Season the beans.
- Sprinkle the bacon with granulated onion, brown sugar and smoked paprika.
- Wrap the beans with the bacon.
- Bake in the oven until the bacon has crisped.

Can you make them ahead of time?
These bean bundles are best to serve as soon as you’ve made them so that the bacon is nice and crispy. You can wrap the beans in the bacon a couple of hours before you want to cook them, so you just need top pop them in the oven to serve.
Why do you need to place them in iced water?
This is a crucial step when cooking these beans. Placing them in ice water stops the cooking process so that they don’t get too soft and still have a nice bite to them. It also helps to keep them a vibrant green color.

Tips!
- Take care not to overcook the green beans when you boil them. They just need a couple of minutes.
- I used fresh beans, but you can use frozen too. They may require a little longer to boil them, but otherwise the recipe remains the same.
- Line a baking sheet with foil so that the green bean bundles are easy to remove and clean up is quicker.

Ingredients1x2x3x
- ▢ 12 ounces fresh green beans washed & ends trimmed
- ▢ 5 slices thin-cut bacon cut across into thirds
- ▢ 1 teaspoon kosher salt for the beans, extra for the boiling water
- ▢ ½ teaspoon freshly ground black pepper
- ▢ ½ teaspoon granulated onion
- ▢ 2 tablespoons brown sugar
- ▢ 1 teaspoon smoked paprika
- ▢ Toothpicks for securing the bacon
- ▢ Olive oil
Instructions
- Adjust oven rack to middle-lower position and heat oven to 400°F.
- Line a large baking sheet with foil and spray the foil with nonstick spray.
- Bring a pot of salted water to boil over high heat. While the water heats, prepare a large bowl of ice water and have a slotted spoon (or spider utensil) ready. Place the beans in the boiling water and cook 1- 3 minutes or until the beans are partially cooked but still have a little snap. Transfer the beans to the ice water to stop the cooking process. After 2 minutes, transfer the cold beans to a paper towel-lined baking sheet to dry. Pat the beans completely dry with paper towels.
- Sprinkle the dry beans with kosher salt, freshly ground black pepper and granulated onion.
- Place the bacon on a work surface and sprinkle with granulated onion, brown sugar and smoked paprika.
- Wrap 6-7 beans with 1/3 slice of the cut bacon (brown sugar-side up). Secure the green bean bundle with a toothpick and place on the foil-lined baking sheet. Repeat the process, leaving 1-2 inches between each bundle. Drizzle the bundles lightly with olive oil.
- Cook at 400°F until bacon has crisped, about 15-20 minutes.
- Serve immediately and enjoy!

This Essential Grocery List is an absolute life saver for my family on the busy weeks. However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
