My favorite easy Beef Burrito recipe is hearty, filling, and sure to taste just as good as your favorite Mexican restaurant! Seasoned ground beef, refried beans, cheese, rice, and salsa are loaded into flour tortillas to make these tasty beef burritos for a quick meal. I love to make these for an easy grab-and-go lunch on a busy weekend. My kids can’t get enough.

If you’re looking for an easy Mexican recipe that comes together in under 30 minutes and is chock-full of flavor, look no further. This beef burrito recipe is the hero you need! Just sauté some beef and onion; spoon on some store-bought beans, salsa, and cheese; and bake.
Variations on Beef and Bean Burritos
You can use any kind of meat for this burrito recipe, such as chicken, pork, or turkey. You can also add in your favorite fillings, so don’t be afraid to get creative. Some queso dip , esquites , or pico de gallo would all be delish in these homemade burritos!

- ▢ 1 pound lean ground beef
- ▢ ½ yellow onion chopped
- ▢ 1 ounce taco seasoning (1 packet)
- ▢ 2 tablespoons minced fresh cilantro
- ▢ 6 burrito-sized flour tortillas
- ▢ 16 ounces refried beans warmed (1 can)
- ▢ 1½ cups shredded Mexican cheese blend
- ▢ 2 cups cooked rice
- ▢ 1 cup salsa Use your favorite jarred salsa, or make your own homemade salsa .
- ▢ Sour cream optional, for serving
- ▢ Hot sauce optional, for serving
- ▢ Guacamole optional, for serving

- Preheat oven to 375°F. Line a baking sheet with parchment paper. Set aside.
- Add the beef and onion to a large skillet set over medium-high heat. Cook, breaking the beef apart with a spoon, until browned and no longer pink. Add in the taco seasoning and cook for another minute. Stir in the cilantro. 1 pound lean ground beef, ½ yellow onion, 1 ounce taco seasoning, 2 tablespoons minced fresh cilantro
- Place a tortilla on your work surface. Spread on some refried beans and top with rice, beef mixture, cheese, and salsa. Wrap tightly and place on the parchment lined baking sheet. Repeat with the remaining burritos. 6 burrito-sized flour tortillas, 16 ounces refried beans, 1½ cups shredded Mexican cheese blend, 2 cups cooked rice, 1 cup salsa
- Bake for 5-10 minutes until the cheese has melted and the burrito is slightly crispy. Serve with your favorite condiments. Sour cream, Hot sauce, Guacamole

- To melt the cheese without crisping up the tortilla, wrap the burritos in foil before baking.
- If using a fattier beef, you will want to drain off some of the fat.
- Depending on how full you stuff your burritos, you may need 8 tortillas.
- We love burrito-sized flour tortillas, but you can use smaller tortillas for mini burritos, or try corn or cassava for a different flavor.
- You can make the rice up to a day in advance to save time.

How to Make This Beef Burrito Recipe Step by Step
Cook the Filling: Preheat your oven to 375°F, then line a baking sheet with parchment paper and set aside. Add 1 pound of lean ground beef and ½ of chopped yellow onion to a large skillet set over medium-high heat. Cook, breaking the beef apart with a spoon, until browned and no longer pink. Add in 1 ounce (or 1 packet) of taco seasoning and cook for another minute. Stir in 2 tablespoons of minced fresh cilantro.

Assemble the Burritos: Place 1 burrito-sized tortilla on your work surface. Spread on about ⅓ cup of refried beans, then top with ⅓ cup of cooked rice, ⅙ of the beef mixture, ¼ cup of cheese, and ⅙ cup of salsa. Tightly wrap the tortillas around the filling , and place the finished burrito on the parchment-lined baking sheet. Repeat with the remaining burritos.

Bake the Burritos: Bake the beef burritos for 5-10 minutes until the cheese is melted and the tortilla is slightly crispy.

Serve and Enjoy: Serve with your favorite condiments, like guacamole , sour cream, salsa , or taco sauce .

How to Store and Reheat
Store beef burritos in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes or until warmed through.
How to Freeze
Freeze bean and beef burritos tightly wrapped in aluminum foil for up to 3 months. Let thaw overnight in the refrigerator before reheating.

This Essential Grocery List is an absolute life saver for my family on the busy weeks. It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.
However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
