Blueberry Baked Oatmeal Recipe
I’m a sucker for TikTok and addicted to all of the new and exciting recipes that pop up on there! This new and delicious blueberry baked oatmeal trend has been a total hit in my house.
Studded with blueberries, sweetened with brown sugar, and loaded with old-fashioned oats, this is a wholesome and hearty breakfast. I like to make a big batch on the weekend and enjoy it throughout the week. It reheats wonderfully, making busy weekday mornings a breeze.
Ingredients1x2x3x
- ▢ 2¼ cups old-fashioned oats 225g
- ▢ ½ cup brown sugar 107g
- ▢ 1 tsp baking powder 4g
- ▢ ¼ tsp allspice
- ▢ 2 cups half and half non dairy also works, 454g, room temperature
- ▢ 2 large eggs 100g, room temperature
- ▢ 2 tbsp salted butter 28g, melted (¼ stick)
- ▢ 1 tbsp lemon juice 14g, from ½ lemon
- ▢ 1 tbsp honey 22g
- ▢ ½ tsp pure vanilla extract 2g
- ▢ 2 cups blueberries* 340g
- ▢ 1 cup chopped pecans 114g
- ▢ cinnamon pinch, optional
For Serving (Optional)
- ▢ honey
- ▢ maple syrup
- ▢ fresh fruit
- ▢ yogurt

Instructions
- Preheat oven to 375°F. Spray an 8×8-inch baking pan with nonstick spray. Set aside.
- In a large bowl, whisk the oats, brown sugar, baking powder, and allspice together. 2¼ cups old-fashioned oats, ½ cup brown sugar, 1 tsp baking powder, ¼ tsp allspice
- In another bowl, mix the half and half, eggs, butter, lemon juice, honey, and vanilla extract together until well combined. 2 cups half and half, 2 large eggs, 2 tbsp salted butter, 1 tbsp lemon juice, 1 tbsp honey, ½ tsp pure vanilla extract
- Pour the milk mixture into the oats. Mix well.
- Gently fold in the blueberries and pecans. For an even texture, make sure the ingredients are well mixed before spreading them into the baking dish. 2 cups blueberries*, 1 cup chopped pecans
- Transfer the batter into the prepared baking pan and spread it into an even layer.
- Bake for 40-45 minutes or until golden brown. Let cool before plating and serving. honey

How to Make Blueberry Baked Oatmeal Step by Step
Get the oven going and prepare a baking pan: Preheat the oven to 375°F and spray an 8×8-inch baking pan with nonstick spray. Set aside.

Gather your ingredients.

Combine the dry ingredients : Whisk 2¼ cups old-fashioned oats, ½ cup brown sugar, 1 tsp baking powder, and ¼ tsp allspice in a large bowl.

Combine the wet ingredients : In a separate bowl, mix 2 cups half and half, 2 large eggs, 2 tbsp salted butter, 1 tbsp lemon juice, 1 tbsp honey, and ½ tsp pure vanilla extract.

Combine wet and dry ingredients: Pour the wet mixture over the oat mixture and mix well.

Add the blueberries: Gently fold in 2 cups blueberries and 1 cup pecans. For an even texture, make sure the ingredients are well mixed before spreading them into the baking dish.

Transfer the batter and bake: Pour the batter into the baking pan and spread it into an even layer. Bake for 40-45 minutes or until golden brown.

Cool and serve: Let cool before plating and serving. Enjoy!
How to Store
This is a wonderful recipe to make ahead of time. Let the oatmeal cool to room temperature and store it in an airtight container in the refrigerator for up to 5 days.
Wrap cooled baked oatmeal squares individually in plastic wrap and place into an airtight container in the freezer for up to 3 months. Thaw squares overnight in the refrigerator.

Serving Suggestions
I love topping my baked oatmeal with maple syrup or honey and adding more fruit on top, whether it’s fresh berries or blueberry compote . For a complete breakfast, I’ll serve it with a side of air fryer bacon and a warm and comforting banana bread latte .

This Essential Grocery List is an absolute life saver for my family on the busy weeks. It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!
It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.
However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
