These CHEESY BAKED BREAKFAST SLIDERS are so easy and perfect for feeding a crowd! Baked on Hawaiian rolls with layers of ham, egg, and cheese and topped with a brown sugar dijon butter sauce! TOO GOOD! - 2

These cheesy baked breakfast sliders are so easy and perfect for feeding a crowd. I made assembly quick and easy by keeping the rolls attached, and I loaded them up with eggs, ham, and cheddar cheese. Topped with brown sugar Dijon butter sauce, these sliders are so moist, cheesy, and delicious!

I’ve made ham and cheese sliders with Hawaiian rolls before (and they are so good), but that’s more of a lunch recipe. I just had to turn that family favorite into a breakfast recipe, because I can’t get over how good they are. I added eggs, more cheese, and an amazing brown sugar Dijon butter sauce to give them a little but more sweetness. These breakfast sliders are the ultimate breakfast recipe for hungry families.

What’s in This Breakfast Sliders Recipe?

  • Eggs: I used 10 large eggs to make these sliders.
  • Slider Buns: I love to use Hawaiian rolls for this recipe, they have a nice sweetness that compliments the filling really well. Brioche slider buns would work great too.
  • Cheese: I love to use sharp cheddar cheese in these sliders, but any sliced cheese will do the job well!
  • Deli Ham: I used honey ham to add a little bit of sweetness, but any kind will work as long as it’s thinly sliced.
  • Butter: Salted butter adds moisture and flavor to the buns.
  • Brown Sugar: Adds a touch of sweetness to the buns.
  • Mustard: Whole-grain Dijon mustard adds a nice balancing tang to the buns.

Tips for Success

  • Spray your baking dish or line it with foil so that the baked sliders are easy to remove.
  • Treat the rolls as one when assembling them. Make sure you cover the entire length of the rolls as you add on the cheese, eggs, and ham.
  • I love this combo of eggs, ham, and cheese, but you could easily add bacon , sausage, or even hash browns!
  • You can easily make these breakfast sliders vegetarian by simply leaving out the ham. They are great without, or try swapping it for a plant-based option like Tofurky if you like.
  • Let the sliders cool for a few minutes before serving as they will be piping hot!

How to Store and Reheat

Store leftover breakfast sliders in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. Let thaw overnight in the refrigerator before reheating in a 350°F oven covered with foil for 20-30 minutes, or until warmed through.

Serving Suggestions

These breakfast sliders are quite filling all on their own, but I like to serve them up with a side of home fries and a bulletproof coffee or a simple mango smoothie .

  • Preheat oven to 350°F. Spray a small baking sheet with nonstick spray or line with foil. Set aside.
  • Scramble the eggs over medium heat, adding salt and pepper to taste. Once scrambled to your liking, set aside. 10 large eggs, Kosher salt and freshly ground black pepper
  • Without separating the rolls, cut the entire group in half lengthwise. Place the bottom half on the baking sheet. 12 ounces Hawaiian sweet slider buns
  • Top with 6 slices of cheese, covering the bottom section of rolls. 12 slices sharp cheddar cheese
  • Top with the scrambled eggs, then ham, and the other 6 slices of cheese. ½ pound thinly sliced honey ham
  • Cover with the top layer of rolls.
  • Mix together the melted butter, brown sugar, and Dijon in a small bowl. ¼ cup salted butter, 1 tablespoon brown sugar, 1 tablespoon whole grain Dijon mustard
  • Pour over the tops of the rolls and brush to make sure the rolls are fully covered with the mixture. The more the better, trust me!
  • Bake for 20 minutes or until cheese is fully melted and the tops of the rolls are golden and crisped.

How to Make Breakfast Sliders Step by Step

Scramble the Eggs: Preheat oven to 350°F. Spray a small baking sheet with nonstick spray or line with foil. Set aside. Scramble 10 large eggs over medium heat, adding salt and pepper to taste. Once scrambled to your liking, set aside.

Cut the Rolls: Without separating the rolls, cut the entire 12-ounce package in half lengthwise. Place the bottom half on the baking sheet.

Top with Cheese: Top with 6 slices of sharp cheddar cheese, covering the bottom section of rolls.

Mix the Topping: Mix together ¼ cup of melted salted butter, 1 tablespoon of brown sugar, and 1 tablespoon of whole-grain Dijon mustard in a small bowl.

Essential Grocery List

It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.

However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
