It’s low-calorie and filled with nutrients, so it’s perfect for any diet, detox, weight loss, or healthy meal plan. No need to sacrifice taste for this one!

Cabbage Soup
The only ingredients you need for this healthy soup recipe are a bunch of veggies, broth, tomato paste, and some seasonings. Cabbage is a super low-calorie vegetable, but it’s also filled with tons of awesome nutrients. It makes this cabbage soup great for Weight Watchers or another diet program, a New Year’s detox, or general weight loss. And of course, it’s delicious enough that you’ll want to add it to your regular diet.
Feel free to swap out the veggies to your liking. Try adding sweet peas, bell peppers, squash, or kale. Or if you want to add some spice, try spicy peppers with the other vegetables, like jalapeños. You can also mix in red pepper flakes, cayenne pepper, and/or chili powder with the other seasonings.

- ▢ 3 cups nonfat low-sodium beef broth or vegetable broth or chicken broth
- ▢ 2 cloves garlic minced
- ▢ 1 tablespoon tomato paste
- ▢ 2 cups chopped cabbage
- ▢ ½ yellow onion
- ▢ 1 cup chopped carrot
- ▢ 1 cup green beans
- ▢ ½ cup chopped zucchini
- ▢ 1 cup diced tomato
- ▢ 1 tablespoon fresh basil chopped
- ▢ ½ teaspoon dried oregano
- ▢ Kosher salt and freshly ground black pepper to taste

- Spray a large pot with olive oil spray.
- Sauté the onions, carrots, and garlic over medium-high heat for 5 minutes, or until the onion is translucent and the carrots soften. ½ yellow onion, 1 cup chopped carrot, 2 cloves garlic
- Add the broth, tomato paste, tomatoes, cabbage, green beans, and all spices. Stir to combine. 3 cups nonfat low-sodium beef broth, 1 tablespoon tomato paste, 2 cups chopped cabbage, 1 cup green beans, 1 cup diced tomato, 1 tablespoon fresh basil, ½ teaspoon dried oregano, Kosher salt and freshly ground black pepper
- Reduce heat to simmer and cook for 10 minutes or until the veggies are all tender to your liking.
- Add the zucchini and continue to simmer for 10 more minutes. ½ cup chopped zucchini
- Serve hot garnished with chopped chives or thyme if desired. Enjoy!

How to Make Cabbage Soup Step by Step

Get the pot ready : Spray a large pot with olive oil spray.

Sauté aromatics and garlic: Sauté 1/2 yellow onion, 1 cup chopped carrots, and 2 cloves of garlic over medium-high heat for 5 minutes, or until the onion is translucent and the carrots soften.

Add in the broth and a few other vegetables: Add the 3 cups of low-sodium beef broth, 1 tablespoon tomato paste, 1 cup diced tomatoes, 2 cups chopped cabbage, 1 cup green beans, 1 tablespoon fresh basil, 1/2 teaspoon oregano, kosher salt, and freshly ground black pepper. Stir to combine.

Simmer : Reduce heat to simmer and cook for 10 minutes or until the veggies are all tender to your liking.

Add the zucchini : Add 1/2 cup chopped zucchini and continue to simmer for 10 more minutes.

Garnish and serve: Serve hot, garnished with chopped chives or thyme if desired. Enjoy!
How to Store and Reheat
Store leftovers in an airtight container, and keep them in the refrigerator for up to 4 days. Reheat on the stovetop over medium-low or in the microwave in 30-second increments until warmed through.
This recipe is freezer-friendly, so you can make a batch and store it for easy, healthy meals. It’s a great meal prep recipe! Pour the soup into freezer-safe containers, and freeze it for up to 3 months. Let thaw overnight in the refrigerator before reheating.

Serving Suggestions
This cabbage soup is great on its own, but you can make it a more filling meal by adding some protein. I love to add simple poached or shredded chicken to mine! These flavorful pesto shrimp are also delish!

It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!
It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.
However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
