These hearty little cheeseburger bombs blew me away with their delicious flavor! Biscuit dough buns are stuffed full of ground beef, bacon, cheese, ketchup, and pickles, then baked until hot. It’s everything I love about bacon cheeseburgers in a convenient handheld pocket of goodness that’s easy to dip!

These cheeseburger bombs are the perfect handheld treat for parties! They have all the great flavor of a classic cheeseburger in a neat little package for easy snacking. Tender ground beef, salty bacon, creamy cheese, and crunchy pickles create a delightful texture sensation!

What’s in This Cheeseburger Bombs Recipe?

  • Bacon: Slice the raw bacon into ¼-inch thick strips before cooking.
  • Beef: I like 85%-lean ground beef.
  • Onion + Garlic: Enhance the savory flavor of the beef.
  • Ketchup: Adds a touch of acidity and sweetness to the filling. It also makes a great dipping sauce!
  • Worcestershire Sauce: Enhances the umami flavor of the beef.
  • Pickles : Add a fresh and briny flavor and a bit of crunch!
  • Biscuit Dough: Store-bought is the simplest choice, but you could also use homemade biscuit dough . I used Pillsbury Grands Southern Homestyle Butter Tastin’ .
  • Cheese: I like cheddar, but feel free to use your favorite cheese!

Tips for Success

  • Make sure to drain off any excess fat from the beef to avoid greasy filling.
  • Don’t roll the dough too thin or the filling will burst through.
  • Brushing the tops of the biscuit dough with butter and sesame seeds before baking makes it look and taste like a classic sesame seed bun.

How to Store and Reheat

Store leftover cheeseburger bombs in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes, or until warmed through.

Freeze cheeseburger bombs in an airtight container or Ziplock bag for up to 3 months. Let thaw overnight in the refrigerator before reheating.

These bacon cheeseburger bombs are the perfect portable snack. Serve them with individual dip cups of ketchup, mustard , or our favorite sweet and spicy burger sauce ! Add a side of homemade french fries , and you’ve got one tasty meal!

  • ▢ 4 slices bacon sliced into ¼-inch thick pieces
  • ▢ 1 pound ground beef
  • ▢ ½ onion chopped
  • ▢ 2 cloves garlic minced
  • ▢ 2 tablespoons ketchup plus more for serving
  • ▢ 1 teaspoon Worcestershire sauce
  • ▢ 2 dill pickles finely chopped
  • ▢ 16.3 ounces refrigerated biscuit dough we used Pillsbury Grands Southern Homestyle Butter Tastin’ (1 (8-count) tube)
  • ▢ 1 cup freshly shredded cheddar cheese
  • ▢ 2 tablespoons unsalted butter melted
  • ▢ Sesame seeds optional, for topping
  • ▢ Yellow mustard optional, for dipping

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  • In a large skillet over medium heat, cook the bacon until crisp. Remove with a slotted spoon. 4 slices bacon
  • Add the ground beef and onion, cook, breaking up the beef with a spoon until the beef is cooked through and the onion is translucent, 7-10 minutes. Add the garlic and cook for 1 minute or until fragrant. Drain off any excess grease. 1 pound ground beef, ½ onion, 2 cloves garlic
  • Off heat, stir in the ketchup, Worcestershire sauce, chopped dill pickles, and cooked bacon. 2 tablespoons ketchup, 1 teaspoon Worcestershire sauce, 2 dill pickles
  • While the beef cooks, roll each biscuit out until they are ¼ inch thick. Divide the filling and cheese between the biscuits. Pinch the corners together to form a ball. Place seam side down on the prepared baking dish. 16.3 ounces refrigerated biscuit dough, 1 cup freshly shredded cheddar cheese
  • Brush with melted butter and sprinkle with sesame seeds. Bake for 20 minutes or until the biscuits are cooked and golden brown. Serve with ketchup and mustard for dipping. 2 tablespoons unsalted butter, Sesame seeds, Yellow mustard

How to Make Cheeseburger Bombs Step by Step

Cook the Bacon: Preheat the oven to 375°F. Line a baking sheet with parchment paper. In a large skillet over medium heat, cook 4 chopped slices of bacon until crisp. Remove with a slotted spoon.

Sauté the Beef and Onions: Add 1 pound of ground beef and ½ of a diced onion , and cook, breaking up the beef with a spoon until the beef is cooked through and the onion is translucent, 7-10 minutes. Add 2 minced cloves of garlic and cook for 1 minute or until fragrant. Drain off any excess grease.

Add the Sauce and Pickles: Off the heat, stir in 2 tablespoons of ketchup, 1 teaspoon of Worcestershire sauce, 2 chopped dill pickles, and the cooked bacon.

Form the Cheeseburger Bombs: While the beef cooks, roll out 8 biscuits from a 16.3-ounce tube until they are ¼ inch thick. Divide the filling and 1 cup of shredded cheddar cheese between the biscuits. Pinch the corners together to form a ball. Place seam side down on the prepared baking dish.

Bake the Cheeseburger Bombs: Brush the bombs with 2 tablespoons of melted butter and sprinkle with sesame seeds. Bake for 20 minutes or until the biscuits are cooked and golden brown. Serve with ketchup and mustard for dipping.

Essential Grocery List

It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.

However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.

In the list below, I’ve compiled everything I always have on my stock-up grocery list.
