Chicken Enchilada Dip is one of the cheesiest and most delicious dips I’ve ever made. This easy Tex Mex dip recipe is filled with chicken, cream cheese, corn, beans, tomatoes, and enchilada sauce. It’s sure to be an instant favorite on game day or any get-together!

Chicken Enchilada Dip
Chicken Enchilada Dip is a mix of all my favorite flavors: cheese, chicken, beans, cream cheese, enchilada sauce, and more. This is the perfect dip for any party!
When I’m left to my own devices, I’ll choose cheese for dinner EVERY night. It’s part of the reason I waited so long to learn how to cook. Instead of making a whole meal for myself, I preferred to just eat whatever was easy and tasted good. Cheese dip is an acceptable meal, right? While you might not eat this cheesy Chicken Enchilada Dip recipe for dinner like I did, you will want to eat this for an appetizer or serve it at your next party.
This is the original Chicken Enchilada Dip recipe, and it’s inspired my spin-off Green Chile Chicken Enchilada Dip !
Ingredients1x2x3x
- ▢ 4-5 cups chopped rotisserie chicken
- ▢ 2 8 oz package low-fat cream cheese
- ▢ 1 can black beans drained and rinsed
- ▢ 1 can yellow corn drained and rinsed
- ▢ 1 can Rotel tomatoes drained
- ▢ 1 can medium enchilada sauce or mild or hot, depending on what you like best
- ▢ 2 tbsp taco seasoning
- ▢ 2 cups Mexican blend cheese
- ▢ cilantro for garnish

Instructions
- Preheat the oven to 400°F.
- In a large bowl, mix together the cream cheese, beans, corn, tomatoes, enchilada sauce, and taco seasoning.
- Stir in the chicken.
- Pour the mixture into a casserole dish or pie dish (this mixture would make enough for one large casserole dish or 2 pie dishes)
- Top with the cheese.
- Bake for 15-20 minutes or until cheese is bubbly and melty (the BEST!)
- Top with sour cream and cilantro (optional). Enjoy!

How to Make Chicken Enchilada Dip Step by Step

Combine all the ingredients except the chicken and cheese: Mix together 2 8-ounce packages of cream cheese, 1 can of corn, 1 can of beans, 1 can of tomatoes, 1 can enchilada sauce, and 2 tablespoons taco seasoning in a large bowl.

Add the chicken: Stir in 4-5 cups of cooked chicken.

Transfer to an oven safe dish : Pour the mixture into a dish that goes in the oven.

Add the cheese : Top with 2 cups of the shredded cheese.

Bake the dip : Bake in the oven for 15-20 minutes at 400°F.

Garnish : Top the cheese dip with sour cream and cilantro and enjoy.
How to Store
Store uneaten chicken enchilada dip in the fridge in an airtight container for 3-4 days. Reheat in the oven or microwave.

Serving Suggestions
This cheesy, gooey dip is ideal for a batch of crispy homemade tortilla chips or even wonton chips would work to scoop up the cheesy goodness. Serve alongside some fresh veggie sticks and a bowl of creamy guacamole and you’ll be all set!

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.
However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
