I love a quick and easy recipe to add to my Christmas cookie repertoire, and these crockpot white chocolate haystacks are it. Made in the slow cooker for a hands-off approach, these Christmas haystacks are ridiculously easy to put together. They take just minutes to prep and utilize only 4 simple ingredients. I can’t think of a more fun and delicious treat!

Melting chocolate can be such a chore, but I have found that it’s way easier in the slow cooker. These white chocolate haystacks are stirred together in the crockpot, and there’s no risk of burning the chocolate or little hands. My kids love helping me make these Christmas haystack cookies, and I love making them in my slow cooker. They’re crunchy, sweet, and so delicious!
What’s in This White Chocolate Haystacks Recipe?
- White Chocolate: I used white melting chocolate, but almond bark also works well. Of course, you can swap for any kind of chocolate you love, such as milk, semisweet, or dark. You could also use colored candy melts for even more festive color.
- Chow Mein Noodles: Give these haystacks their signature shape and crunch.
- Peanuts: Add extra crunch and nutty flavor. Feel free to swap for your favorite nut. If you have an allergy, you can swap them out for pretzel pieces.
- Sprinkles: Add a bit of festive color to the haystacks. I used nonpareils, but any kind will work.

Tips for Success
- Be sure to spray your crockpot with nonstick spray before adding the ingredients.
- If you don’t have a slow cooker, you can make these white chocolate haystacks on the stovetop. Add the chocolate, noodles, and peanuts to a pot on low heat, and stir occasionally while the chocolate melts. Don’t have it on too high a heat or the chocolate will burn.
How to Store
Once your white chocolate haystacks have set, transfer them to an airtight container with the layers separated with parchment and keep them in the fridge. They will keep well for up to a week. I like to take them out of the fridge about 30 minutes before enjoying them so that they are slightly softer.

Instructions

- Place white chocolate, chow mein noodles, and peanuts in your crock pot. 12 ounces white melting chocolate , 2 cups chow mein noodles, 1 cup peanuts
- Cook on HIGH for 1 hour, or until chocolate is completely melted.
- Stir contents together.
- Place spoonfuls on a baking sheet lined with parchment paper.
- Add sprinkles before the chocolate hardens. 2 tablespoons sprinkles
- Chill and serve.
