I’m all about easy, low-carb dinners, and these ground chicken lettuce wraps are truly one of the quickest and easiest healthy recipes I know. They’re ready to serve in just 30 minutes and loaded with tons of flavor from ingredients like fish sauce, chili sauce, apple cider vinegar, and ground ginger. I love them for dinner, but they’re also a great healthy appetizer for guests.

These ground chicken lettuce wraps are my go-to recipe when I’ve overindulged a little and am craving something lighter and a little better for me! The chicken is perfectly seasoned and makes for a great easy weeknight meal that also happens to be low in carbs and calories. Plus, everything happens in one skillet, so cleanup is a breeze! My whole family loves these lettuce wraps!
What’s in This Ground Chicken Lettuce Wraps Recipe?
- Butter: Salted butter adds richness and flavor to the filling.
- Onion : Yellow onion adds a touch of sweetness to the filling.
- Chicken: Lean ground chicken makes these wraps super healthy!
- Fish Sauce: Adds a salty, earthy, and umami flavor.
- Vinegar: Apple cider vinegar adds a touch of balancing acidity to the sauce.
- Chili Sauce: Adds a little bit of spice!
- Lemon Juice: Adds a pop of freshness.
- Spices: Garlic powder, ginger, and cayenne pepper deepen the flavor of the chicken and add a touch of spice.
- Green Onion: Adds a pop of fresh oniony flavor.
- Water Chestnuts: Add a delightful crunch.
- Cashews: Add crunch and a nutty flavor.
- Lettuce: Bibb lettuce is best because it has large, wide leaves. But romaine or even iceberg will work well.

Tips for Success
- These lettuce wraps are delicious with chicken, but they also work great with ground turkey, pork or even beef. If you are looking for something tasty for a meat-free Monday, you can also make them with plant-based ‘meat’ crumbles.
- Once the chicken is cooked, be sure to drain any excess fat so that it’s not greasy.
- This skillet ground chicken is also great in tortilla wraps!
How to Store and Reheat
These chicken wraps are perfect for weekly meal prep . Once the chicken has been cooked, let it cool and place covered in the fridge. It will keep well for 3 days. You can eat the cooked chicken cold, or reheat it through in a skillet to serve.

Serving Suggestions
These ground chicken lettuce wraps make a tasty appetizer all by themselves, but for dinner, I love to serve them with this light and tangy Asian cucumber salad or some baked avocado fries .

- ▢ ¼ cup chopped water chestnuts
- ▢ ¼ cup chopped cashews
- ▢ 1 head bibb lettuce
- ▢ Sesame seeds optional, for garnish

How to Make Ground Chicken Lettuce Wraps Step by Step
Sauté the Onion: In a large skillet set over medium-high heat, melt 2 tablespoons of salted butter and sauté 1 chopped yellow onion until just softened.

Cook the Chicken: Add 1 pound of ground chicken into the skillet and cook until browned. Drain any excess fat.

Season the Chicken: Season the chicken with 2 tablespoons of fish sauce, 2 tablespoons of apple cider vinegar, 1 tablespoon of chili sauce, 1 tablespoon of lemon juice, 1 teaspoon of garlic powder, ½ teaspoon of ground ginger, and ¼ teaspoon of cayenne pepper, and stir for 1-2 minutes over medium heat.

Add the Crunchies: Mix in 1 sliced green onion, ¼ cup of chopped water chestnuts, and ¼ cup of chopped cashews. Cook for another 3 minutes and then remove from heat.

Assemble the Wraps: Prepare 1 head of bibb lettuce leaves by washing them and then patting them completely dry. Scoop some of the chicken mixture into the center of each lettuce leaf. Garnish with additional green onions and sesame seeds.

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.
However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
