This homemade Herbs de Provence recipe is one of my favorite pantry staples to keep on hand! Although it has a long list of ingredients, it keeps for a long time once made, which makes my weeknight dinners much easier. No more tedious measuring! The herbs used are considered to be typical of the Provence region in South West France. Commonly, the blend is used to add fragrant sweet and savory flavor to soups, stews, and grilled meats, but I enjoy it on just about everything!

Making your own herb mixes is so simple to do, and I always have several jars in my pantry. It’s a perfect way to lift dishes and add more flavor to them with ease! There are a lot of different herbs that go into herbs de Provence and measuring out small spoonfuls of each one for a recipe can take a ton of time. Setting aside just 5 minutes to make this herb mix saves me so much time in the long run.
What’s in This Herbs de Provence Recipe?
- Rosemary: Has an earthy, woodsy, almost pine-like flavor.
- Fennel: Has a sweet, licorice-like flavor.
- Thyme: French thyme has an earthy and savory flavor.
- Basil: Sweet basil has a balanced sweet and savory flavor.
- Savory: Has a peppery and meaty flavor.
- Tarragon: French tarragon has a light herbal and licorice-like flavor.
- Lavender: French lavender has a distinct sweet and floral flavor.
- Chervil: Has a mild peppery and licorice-like flavor.
- Dill: Has a fresh, bright, and sweet flavor with notes of citrus.
- Oregano: Has a slightly bitter and pungent flavor.
- Marjoram: Has an earthy and woodsy oregano-like flavor.

Tips for Success
- Make sure your herbs aren’t stale for maximum flavor.
- Use culinary lavender to avoid an overly bitter and “soapy” taste.
- Store the mix in an airtight jar or container for maximum freshness.
- Try using this flavorful mix in place of Italian seasoning !
How to Store
I prefer to use up my homemade herbs de Provence within 3 months for the freshest flavor. Because I’m using previously opened jarred spices to make it with, I find that it doesn’t keep quite as long as a sealed from-the-store spice blend. But that doesn’t really matter since I use it up so quickly! For maximum freshness, keep it in an airtight container.

Serving Suggestions
I use this homemade herbs de Provence seasoning all the time. In fact, it’s in some of my favorite recipes on the site, including this whole roast chicken , these melting potatoes , and my baked turkey meatballs . It’s also great added to pan seared chicken breast or mashed potatoes for an extra kick of flavor.
