In my opinion, there’s no better drink to wake up and cool down with than an iced espresso. I make mine with homemade brown sugar simple syrup, and it’s so tasty! This is my go-to summer coffee and helps me skip my usual expensive drive-thru order. It saves me so much time and money!

If you are anything like me and a bit of a caffeine addict, you are going to love this homemade iced espresso. It’s perfectly sweet and creamy with all that good buzzy caffeine to keep you going. The homemade brown sugar syrup is simple to throw together and makes enough for the whole week, so there’s no excuse! I love this delicious iced espresso recipe! If I’m looking for a caffeine hit and breakfast all in one, this coffee smoothie is ideal.
What’s in This Iced Espresso Recipe?
- Brown Sugar Syrup: I made this delicious syrup from water, brown sugar, vanilla extract , and a cinnamon stick– easy!
- Espresso: Use your favorite kind. I like a double shot, but a single will also work. If you don’t have an espresso machine, make a strongly-brewed cup of coffee instead.
- Milk: Any kind of milk works here. I use a 2%, or for a more creamy flavor, you can use half-and-half. Almond, oat milk , coconut, or soy are all great choices.

Tips for Success
- I love the homemade brown sugar syrup, but if you’re in a rush, any flavored coffee syrup works well. Simple, brown sugar, vanilla, or hazelnut would all be delish!
- Use a cocktail shaker to shake everything together. If you don’t have one, you can use a large mason jar with a lid.
- Turn this into a more adult drink by shaking in a shot of Baileys !
- Get indulgent and add some whipped cream on top. YUM!
How to Store
The brown sugar syrup will keep in an airtight container in the refrigerator for up to 1 week, so it’s perfect to prep on Sunday for the week ahead.

For the Brown Sugar Syrup
- ▢ ⅓ cup water
- ▢ ¼ cup brown sugar
- ▢ 1 teaspoon pure vanilla extract
- ▢ 1 cinnamon stick
For the Iced Espresso
- ▢ 2 cups ice divided
- ▢ 1 shot espresso
- ▢ 2 tablespoons brown sugar syrup from above
- ▢ ½ cup milk
Instructions
- Prepare the brown sugar syrup. In a small pot over medium heat combine the water, brown sugar, vanilla, and the cinnamon stick. Bring to a gentle simmer and cook for 5 minutes until the sugar has dissolved and thickened. Remove from heat and transfer to a jar. ⅓ cup water, ¼ cup brown sugar, 1 teaspoon pure vanilla extract, 1 cinnamon stick
- Once you are ready to prepare the latte fill a shaker with 1 cup ice. Add the espresso and the brown sugar syrup and vigorously shake. 2 cups ice, 1 shot espresso, 2 tablespoons brown sugar syrup
- Fill a glass with the remaining 1 cup ice and pour the iced coffee over it. Top with the milk and serve. ½ cup milk
