5-Star Review

“These look so refreshing for Cinco de Mayo, a hot, summer day, or anytime for that matter!” -Julie

Layered Margarita Popsicles

Layered Margarita Popsicles are the perfect cocktail alternative for the summer, especially Cinco de Mayo. These refreshing homemade ice pops are easy, colorful, and full of flavor!

There are three layers to these popsicles, each a different flavor and color: Strawberry Margarita , white peach margarita, and lime margarita. Each section is made with simple ingredients to make the entire process easy, fun, and refreshing. We use tequila as our alcohol of choice, and sweeten the popsicles with agave nectar.

If you like margaritas, you’ll love these easy alcoholic popsicles. You can skip the tequila if you’d like a family-friendly version or try these Red, White and Blue Popsicles instead.

Tips For Beginners

An ice pop mold is the easiest and least expensive way to make popsicles. Some include the sticks, which is very convenient. If the mold doesn’t have a built-in stick handle, here are a few things you can do:

  • Freeze the popsicles for about an hour before inserting the popsicle sticks. This will help them stand up straight.
  • Place foil over the mold and poke the sticks through. The foil supports the sticks and keeps them upright.
  • Use disposable paper cups, adding sticks as mentioned above. Once frozen, tear away the cup and enjoy the pop.

Instructions

  • Combine only the liquid ingredients for each section in 3 separate cups or containers. Do not mix in the blended strawberries or peach. 1 cup strawberry juice blend, 1 tablespoon tequila, 1 tablespoon agave nectar, ½ tablespoon fresh lime juice, 1 cup lemon-lime soda, 1 tablespoon tequila, 1 tablespoon agave nectar, ½ tablespoon fresh lime juice, 3 tablespoons frozen limeade concentrate, 1 cup water, ½ tablespoon agave nectar, 1 tablespoon tequila
  • Spoon ⅙ of strawberries into each popsicle mold. Pour ⅙ of strawberry margarita mixture into each popsicle mold, pouring to about ⅓ of the way up the popsicle mold. Add popsicle sticks and allow this section to freeze for at least 2 hours before proceeding to the next section. 4 strawberries
  • After the strawberry section is frozen, spoon ⅙ of the fresh peaches into each mold. Pour ⅙ of the peach margarita mixture into each mold; now the molds will be filled about ⅔ of the way up. Allow this section to freeze for at least 2 hours before proceeding to the final section. 1 white peach
  • After the peach section has frozen, top with lime margarita mixture. If desired, cut small lime pieces to place at the top of each popsicle. Freeze for at least 2 hours or until completely frozen through.
  • When you’re ready to serve the popsicles, dip the mold halfway into lukewarm water for about 30 seconds to loosen the pops, then gently remove and enjoy.

Becky’s Tips

  • Stick to one teaspoon of tequila per popsicle layer. If you use more than they simply won’t freeze. The stick will slide right out, and you’ll have to dig all that good stuff out with a spoon.
