This easy Mexican Pizza recipe is one of my absolute favorites as it serves up crispy tortillas, loaded with deliciously seasoned ground beef, refried beans, enchilada sauce, and Mexican cheese. These Taco Bell-inspired pizzas are super simple to prepare and oh so tasty!

Homemade Mexican Pizzas Recipe

These Mexican pizzas are one of my absolute favorites. There’s nothing more satisfying to me than pulling those bubbly tortilla pizzas out of the oven. The tortillas get perfectly crisp, and the cheese melts right over the seasoned beef and beans for the most delicious bite every time.

I use a can of refried beans to create a thick layer that helps hold everything together. Even if you’re not a huge bean fan, I recommend using at least half so the pizzas don’t fall apart. I usually finish mine with a dollop of sour cream and a sprinkle of green onions, but honestly, any of your favorite taco toppings work great here.

Tips for Beginners

  • Serve straight out of the oven . After you’ve added your toppings, cut the pizzas into four wedges and serve. The tortillas soften under the toppings, so these pizzas are best served immediately.
  • Use an offset spatula. This will evenly spread the beans over the tortillas.
  • Use 93% lean ground beef . It has plenty of flavor. If you use a meat with a higher fat content, be sure to drain off any excess grease after it’s cooked.
  • Grate your own cheese . Don’t use store-bought grated cheese as it won’t melt as easily as freshly grated.

  • ▢ 1 lb. ground beef (93% Lean)
  • ▢ 1 oz. taco seasoning
  • ▢ ¼ cup water
  • ▢ 1 tbsp oil
  • ▢ 16 corn tortillas
  • ▢ 16 oz. refried beans pinto or black
  • ▢ 10 oz. red enchilada sauce
  • ▢ 4 Roma tomatoes finely diced
  • ▢ 2 cups shredded Mexican blend cheese
  • ▢ 3 green onions finely chopped

To Prep:

  • Preheat oven to 350°F.
  • Heat a medium nonstick skillet over medium heat. Add the ground beef and use a wooden spoon to crumble while it cooks. When almost done, add the taco seasoning and water, stirring to combine. Cook for 8-10 minutes or until beef reaches an internal temperature of 160°F. Transfer beef to a paper towel lined plate and set aside. Wipe out skillet to clean. 1 lb. ground beef, 1 oz. taco seasoning, ¼ cup water
  • Return skillet to medium high heat and add the oil. Cook the tortillas in batches, flipping frequently to avoid burning (I used tongs to flip). Once browned to your liking and crisp, set aside. We like ours extra crispy, but feel free to make them as light or dark as your family likes. 1 tbsp oil, 16 corn tortillas
  • Heat the refried beans until just soft and spreadable in a microwave safe bowl. 16 oz. refried beans

To Assemble:

  • Place four tortillas on a baking sheet sprayed with nonstick spray.
  • Spread a thin layer of refried beans onto each tortilla. Top each with 1-2 tbsp of beef.
  • Top each with another tortilla, making layers.
  • On each top layer, add 1 tbsp enchilada sauce, tomatoes, and sprinkle generously with cheese. Finally, top with green onions to taste. 10 oz. red enchilada sauce, 4 Roma tomatoes, 2 cups shredded Mexican blend cheese, 3 green onions
  • Bake for 6-7 minutes or until cheese is fully melted and bubbly. Cut and serve. Enjoy!

How to Make Mexican Pizza Step by Step

Get the oven going: Preheat the oven to 350°F.

Cook the ground beef : In a skillet over medium heat, add 1 lb. ground beef, then add 1 oz. of the taco seasoning and ¼ cup water. Place the beef aside and wipe out the skillet.

Crisp the tortillas: Cook the tortillas in the skillet in batches, once browned to your liking and crisp, set aside. We like ours extra crispy, but feel free to make them as light or dark as your family likes.

Warm the beans: Heat 16 oz. refried beans in a microwave-safe bowl until just soft and spreadable.

Make the pizzas : Place four tortillas on a baking sheet, spread on the refried beans, a tbsp of beef, and then drizzle with the enchilada sauce, tomatoes, and cheese.

Repeat with more layers of tortilla and filling. Then top with green onions and cheese.

Bake and serve: Bake for 10 mins and serve. Enjoy.

Variations

I love this Mexican pizza because I can switch up the ingredients to create different flavor combinations each time, so we never get bored with eating them.

  • Fillings: Stir in corn, diced green chiles, or sauteed bell peppers.
  • Toppings: Sprinkle with cilantro, avocado, sliced jalapeños, taco sauce , or salsa verde.

How to Store

These taste best warm from the oven, but feel free to store leftovers, covered, in the refrigerator for 3-4 days. You can reheat them in the oven, in a skillet on the stove, or in the microwave.

This recipe is best cooked/reheated in the oven so that the tortillas stay crispy.

Serving Suggestions

I love serving these Mexican pizzas with a side of cilantro lime rice , a dollop of creamy guacamole , or a sprinkling of pickled red onions to add some bite. For dessert, there’s nothing better than a slice of churro cheesecake .

It’s so helpful to have a basic grocery list to help me remember which foods to buy at the store. This food shopping list is my go-to!

It’s better to stock up on things like grains, seasonings and spices, baking essentials, oils, condiments, canned and frozen foods, etc. so I can just grab them when I need them. These things have a long shelf life , so I keep them in my kitchen for convenience.

However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
