This easy mint chocolate chip ice cream pie recipe has quickly become a family favorite. You only need three ingredients: ice cream (flavor of your choice), Cool Whip (regular or lite), and a pre-made pie crust to make it as simple as possible.

- Easy. This is surprisingly easy to make and requires no cooking. You only need 3 ingredients, plus a pre-made cookie crust.

Variations on Mint Chocolate Chip Pie
Because this ice cream pie is just so easy, it’s also easy to change up the flavor. Just swap out the mint chocolate chip ice cream for your favorite flavor, like vanilla, pumpkin , or red velvet ! We used a chocolate cookie crust, but you can use a graham cracker crust , or any pre-made pie crust.

Store leftover mint chocolate chip ice cream pie tightly wrapped in the freezer for up to 1 month.

Notes from the Test Kitchen
- A handheld electric mixer is ideal for blending the ice cream and Cool Whip. But you can use a stand mixer, or even mix by hand if needed.
- Freeze for at least 2 hours to let it set.
- To get clean slices, run your knife under hot water for a few seconds, and wipe to dry between slices.

- ▢ 1 quart mint chocolate chip ice cream 946 grams (¼ gallon)
- ▢ 4 ounces Cool Whip 113 grams, thawed (½ standard container) – see note
- ▢ 1 chocolate cookie pie crust 170 grams
Toppings (optional)
- ▢ ¼ cup hot fudge 80 grams
- ▢ ¼ cup caramel sauce 80 grams
- ▢ ¼ cup chopped nuts 30 grams, optional (walnuts, pecans or pistachios)

- Take the ice cream out of the freezer 15 minutes ahead of time, so that ice cream is easier to work with.
- Use a hand mixer to blend the Cool Whip and Ice Cream together until uniform. 1 quart mint chocolate chip ice cream, 4 ounces Cool Whip
- Spread the mixture into the pre-made pie crust. Smooth with a spatula or the plastic lid from the crust. 1 chocolate cookie pie crust
- Drizzle the pie with optional toppings like chocolate or caramel sauce and sprinkle with optional chopped nuts. ¼ cup hot fudge, ¼ cup chopped nuts, ¼ cup caramel sauce
- Cover with the crust lid and freeze for at least 2 hours.
- Cut and serve!

Blend the Ice Cream: Take 1 quart of mint chocolate chip ice cream out of the freezer 15 minutes ahead of time, so that the ice cream is easier to work with. Use a hand mixer to blend 4 ounces of Cool Whip and the softened ice cream together until uniform.

Fill the Pie: Spread the mixture into a pre-made chocolate cookie pie crust. Smooth with a spatula or the plastic lid from the crust.

Top the Pie: Drizzle the pie with optional toppings like ¼ cup of hot fudge or caramel sauce and sprinkle with an optional ¼ cup of chopped nuts.

Chill and Serve: Cover with the crust lid and freeze for at least 2 hours. Cut and serve!

However, I do have to go to the supermarket sometimes, and there’s a way to make that trip easy and hassle-free: I keep a grocery list! If I go in blindly, I’ll leave with things I don’t need, and nothing that actually helps me prepare a good meal.
