This Shaved Brussels Sprout Salad with Honey Lemon Dijon Vinaigrette is a simple side dish to serve with any meal. I’ve thrown together Brussels sprouts, toasted almonds, and cheese, and tossed it all with a Honey Lemon Dijon Vinaigrette for a light and delicious flavor. I love that it is so easy and can be made in no time! This recipe even has my two boys eating Brussels sprouts!

What’s in This Brussels Sprout Salad Recipe?
This tasty Brussels sprout salad is simple. It’s made up mostly of Brussels sprouts, with some toasted almonds and Pecorino Romano cheese tossed in. I finish it off with the amazing honey lemon Dijon vinaigrette salad dressing, which is homemade as well. It took me a long time to try shaved Brussels sprouts, but once I did, I was hooked.
- Brussels Sprouts: We used a combination of green and purple Brussels sprouts to add some color and contrast to our salad, but use whatever is available locally.
- Almonds: Sliced toasted almonds add nuttiness and crunch to the salad.
- Cheese: Pecorino Romano adds a salty and umami flavor to the salad.
- Lemon Juice: Adds a fresh and acidic flavor to the dressing that cuts through the fat.
- Honey: Adds floral sweetness to the dressing to balance the acidity.
- Mustard: Dijon mustard adds a spicy flavor to the dressing.
- Shallot: Adds a touch of sweetness and bite to the dressing.
- Garlic: Adds savory and earthy flavor to the dressing.
- Oil: We like extra-virgin olive oil best for this dressing, but canola or vegetable oil will also work.
- Salt + Pepper: Enhance the flavor of the dressing.
Variations on Shaved Brussels Sprout Salad
This Brussels sprout salad is so delicious and versatile. I love to try adding different nuts, like walnuts or pecans, dried fruits (cranberries would be so good!), or cheeses.

How to Store
Store leftover shaved Brussels sprouts salad in an airtight container in the refrigerator for up to 2 days. For longer storage, store the dressing separately and toss together before serving.

Serving Suggestions
This easy salad goes so well with Easter dinner or spread out with other Thanksgiving sides . It’s so light, crunchy, and flavorful! Add some grilled chicken to make this salad into a meal of its own.

Using a food processor to shave Brussels sprouts is such an easy way to do it. Use the slicing blade in the food processor and set it to the thinnest setting. This will slice them up into the perfect size and texture for this shaved Brussels sprout salad recipe.

For the Lemon Honey Dijon Vinaigrette
- ▢ 2½ tablespoons fresh lemon juice (from 3 lemons)
- ▢ 1 tablespoon honey
- ▢ 1 teaspoon Dijon mustard
- ▢ 1 shallot minced
- ▢ 2 cloves garlic minced
- ▢ ¼ cup extra virgin olive oil
- ▢ Kosher salt and freshly ground black pepper to taste
For the Salad
- ▢ 1½ pounds Brussels sprouts green and/or purple or a combo
- ▢ ½ cup sliced almonds toasted
- ▢ ½ cup shredded Pecorino Romano cheese
Instructions
For the Lemon Honey Dijon Vinaigrette
- Combine all ingredients on a medium-sized mixing bowl and whisk vigorously until emulsified. 2½ tablespoons fresh lemon juice, 1 tablespoon honey, 1 teaspoon Dijon mustard, 1 shallot, 2 cloves garlic, ¼ cup extra virgin olive oil, Kosher salt and freshly ground black pepper
For the Brussels Sprout Salad
- With the slicing blade of a food processor set on almost the thinnest setting, slice the Brussels sprouts and transfer them to a large bowl. 1½ pounds Brussels sprouts
- Drizzle the vinaigrette over the Brussels sprouts and toss until the greens are coated with the vinaigrette. Let the coated brussel sprouts sit 30 minutes or up to 2 hours in the refrigerator.
- Right before serving, add the toasted almonds and Pecorino Romano cheese. Toss gently and serve. ½ cup sliced almonds, ½ cup shredded Pecorino Romano cheese
- Season with kosher salt & freshly ground black pepper, if needed.

Yes! They have a unique, slightly bitter flavor when raw which is truly delicious.
We like to use a food processor to speed up the process, but you can also shave Brussels sprouts with a knife. Simply halve the Brussels sprouts lengthwise, place cut-side-down, and slice into thin strips.
We recommend washing your sprouts before shaving them. There’s no need to wash them after they have been cut, as the centers are protected from dirt and debris by the outer leaves.
