This S’mores Ice Cream Sandwich recipe is the perfect super easy summer recipe. Beat the heat with a graham cracker ice cream sandwich filled with ice cream, chocolate frosting, and marshmallow fluff. Nothing beats an ice-cold s’more on a hot summer day!

Making these ice cream sandwiches is so easy, it’s one of our favorite hack recipes. Because it’s “semi-homemade” you won’t be stuck in the kitchen doing loads of prep. You can buy everything and throw it together to create a unique and perfect summer treat.
This graham cracker ice cream sandwich recipe is a great jumping-off point for an ice cream sandwich bar. Try using chocolate chip cookies instead of graham crackers, or swap out traditional chocolate and vanilla ice cream for strawberry, cookies and cream, or sea salt caramel. Change out the frosting flavor to match. Or, for an ultra-indulgent treat, dip half the sandwich in melted chocolate after freezing. The yummy options are endless!
Ingredients1x2x3x
- ▢ 12 graham cracker sheets 186 grams, each split into 2 squares
- ▢ 16 ounces chocolate frosting 454 grams, store bought or homemade
- ▢ 7 ounces marshmallow creme 198 grams, store bought or homemade
- ▢ 1 pint ice cream 473 grams, chocolate or vanilla
Instructions
- Lay the graham crackers face down on a large baking sheet (you should have 24 squares). 12 graham cracker sheets
- Spread 1 tablespoon of chocolate frosting onto 12 squares and 1 tablespoon of marshmallow creme on the other 12. 16 ounces chocolate frosting, 7 ounces marshmallow creme
- Take scissors and cut the cardboard off of the ice cream container, revealing the block of ice cream. 1 pint ice cream
- Use a large knife to slice the ice cream into thirds lengthwise, then cut each third into 2 squares. You might need to trim the sides a bit. I just usually eat the excess :)
- Lay each ice cream square onto the graham crackers with the icing. Take the marshmallow sides (face down) and press onto the top of the ice cream to form each sandwich.
- Freeze immediately for at least 4 hours or until fully set.
- Once set, wrap each sandwich in foil and then place in a freezer-safe Ziplock bag. Then, place in another Ziplock bag.

How to Make a S’mores Ice Cream Sandwich Step by Step
Prepare the graham crackers : Lay 12 graham crackers face down on a large baking sheet (you should have 24 squares).
Add the chocolate and marshmallow creme: Spread 1 tablespoon of chocolate frosting onto 12 squares and 1 tablespoon of marshmallow creme on the other 12.
Cut the ice cream box: Take scissors and cut the cardboard off the ice cream container, revealing the pint of ice cream.
Slice the ice cream: Use a large knife to slice the ice cream into thirds lengthwise, then cut each third into 2 squares. You might need to trim the sides a bit. I just usually eat the excess :)
Add the ice cream to the graham crackers: Lay each ice cream square onto the graham crackers with the icing. Take the marshmallow sides (face down) and press them onto the top of the ice cream to form each sandwich.
Freeze: Freeze immediately for at least 4 hours or until fully set.
Wrap and store : Once set, wrap each sandwich in foil and then place in a freezer-safe Ziplock bag. Then, place in another Ziplock bag.

Pull out of the freezer and enjoy: When you are ready to eat them, take them out of the freezer and enjoy.
How to Store
Store leftover s’mores ice cream sandwiches individually wrapped in foil in a Ziplock bag for up to 3 months. Enjoy straight from the freezer, or let sit out for 5-10 minutes to soften slightly.
Serving Suggestions
Serve these tasty graham cracker ice cream sandwiches with an after-dinner Chocolate Coffee or a Toasted S’mores Martini (adults only), and prepare a Starbucks Pink Drink for the kiddos. This s’mores dessert would make a great addition to your 4th of July BBQ.
