I love making Walking Tacos on busy days when we need something quick, fun, and delicious. I just take a bag of corn chips and load it up with seasoned ground beef, cheese, tomatoes, lettuce—whatever taco toppings we’re in the mood for. Then it’s grab a fork and dig in! It’s such an easy lunch or snack, and the kids always think it’s the coolest way to eat tacos.

Walking Taco Recipe
I’ve always loved tacos, but sometimes I just want something I can eat on the go—no mess, no plate required. That’s where these walking tacos come in. I assemble them right in the chip bag, and they’re honestly one of the most fun and portable meals I make.
I switch it up depending on what I have on hand—Fritos, Doritos , even Ruffles or Cheetos all work great. Sometimes I’ll make my own tortilla chips and toss everything into Ziplock baggies instead. When I want to lighten things up, I’ll use ground turkey or chicken. It’s such a customizable and crowd-pleasing meal that never fails to make dinner a little more exciting.
Ingredients1x2x3x
- ▢ 1 pound ground beef
- ▢ 3 tablespoons taco seasoning (1 packet)
- ▢ 6 (1-ounce) bags corn chips or cheese-flavored tortilla chips
- ▢ 1½ cups shredded lettuce
- ▢ 2 roma tomatoes chopped, or any kind work
- ▢ ¼ cup chopped onion
- ▢ 1 cup freshly shredded cheddar cheese Monterey Jack or Mexican blend are great too
- ▢ salsa optional, for serving
- ▢ sour cream optional, for serving

- Add the beef and taco seasoning to a skillet set over medium heat. 1 pound ground beef, 3 tablespoons taco seasoning
- Brown the ground beef.
- Drain the grease from the skillet.
- Cut open each bag of chips on the long side. 6 (1-ounce) bags corn chips
- Add in a scoop of taco meat, lettuce, chopped tomatoes, and chopped onion. 1½ cups shredded lettuce, 2 roma tomatoes, ¼ cup chopped onion
- Top with cheese, salsa, and a dollop of sour cream. 1 cup freshly shredded cheddar cheese, salsa, sour cream
Becky’s Tips
- Crush the chips before opening the bag to create smaller pieces that are easier to eat.
- If you don’t love raw onions, soak them in ice water for 10 minutes to remove some of the bite.

How to Make Walking Tacos Step by Step

Cook the ground beef : Add one pound of beef and 3 tablespoons of taco seasoning to a skillet set over medium heat, brown the beef, and drain the grease from the skillet.

Open the bag of chips : Cut open each bag of chips on the long side.

Add the filling: Add in a scoop of taco meat, lettuce, chopped tomatoes, and chopped onion.

Add the toppings: Top with cheese, salsa, and a dollop of sour cream and enjoy.
How to Store
Store leftover walking tacos in an airtight container in the refrigerator for up to 4 days. I recommend keeping the toppings stored separately, then assembling the as you plan to eat them. Reheat the beef in the microwave or on the stove set over medium-low heat.
While I don’t recommend freezing the assembled tacos, you can freeze the ground beef for up to 3 months. Let thaw overnight in the refrigerator before reheating.
Serving Suggestions
The great thing about these walking tacos is that they’re a complete meal in a bag! To get a street food feel, serve them alongside esquites . If you’re sitting still, you can also serve them with sides like some hearty refried beans or Mexican rice .
